Hi all! I’m Samantha from The Peanuts Gang and I’ll be pleasing your palettes on Saturdays with recipes and tasty treats. Hope to learn more about you and share more about myself in the coming weeks & months!

With the playoffs in full swing, I love putting together great appetizers that start game day off right by teasing guests with all the great food they are about to experience. One of my go-to recipes is a Cool Veggie Pizza that requires minimal prep and also doubles as a pretty healthy option for those looking to keep up with New Year’s Resolutions.Real Frugal Divas - Cool Veggie Pizza

1 can of reduced fat Crescent Rolls (off-brand works just fine in this scenario)

1 8 oz. package of light cream cheese, softened

Dill Mix Seasoning (based on flavor preference)

Raw cauliflower, broccoli & carrots, minced & diced (extra-fine)

Lay crescent rolls on a cookie sheet (I use my Pampered Chef stoneware) much like the shape of a rectangle and flatten. Bake at 350 degrees until golden brown and cooked through. Let cool completely.

In the meantime, mix desired amount of dill mix (I use about 2 tablespoons) with softened cream cheese until spreadable. Be sure to mince and dice your veggies (for variety and color, add in peppers or other favorite veggies – all raw).

Spread dill mixture over cooled crescent “pizza” and then top with raw veggies (1 small head of broccoli and cauliflower and two regular sized-carrots should do the trick). Refrigerate until serving and then remove and slice into squares. This recipe is fine left overnight in the refrigerator which makes it a great option to make-ahead.
